All native French speakers switch between 3 levels of language on a daily basis, automatically. The more you master the language, the more you are able to use these 3 levels of language adaptively, that is, to choose the level of language correctly.
Basic words are very important but saying bicyclette instead of vélo simply doesn't sound natural. If your language is too formal, you will appear pretentious and you will not always be understood.
